Rare sugar is a monosaccharide that exists only in trace amounts in the nature. On the other hand, most of the monosaccharides that are present in the nature aer called natural sugar. Figure 1 is a schematic diagram showing the abundance of sugar in the nature. The blue spheres are natural sugar and the red ones are rare sugar. According to the previous experimental data, we are investigating about removing crystal water of D-allose dihydrate and D-glucose monohydrate; the removal of crystal water in D-allose dihydrate was reported to occur more easily than that of D-glucose monohydrate. However, the reason for this is still unknown. Therefore, we are focusing on hydrogen bonds in crystals and are trying to clarify the removal of crystal water in both of these two specific monosaccharides.
